Moncel Enterprises started with an opportunity to create our own business with the financial backing of our father, Nickey.  As such, siblings Nicole and Rex sat down and discussed what the business should look like; ultimately, we settled on the food truck business.  With that being said, we had two trucks custom-built down south to fit our wants and needs.  We took delivery of these trucks in November 2023.  We spent the winter fine-tuning them and equipping them the way we wanted.  In the spring of 2024, we finally put them into production, and by mid-summer, we purchased a third trailer.  Since then, we have put up a new commercial kitchen and storage facility for all of the trailers.  Currently, Nicole manages Honey Badger Bites, Rex manages T-Rex Inferno, and Rex’s son Thatcher manages Big T’s Rollin’ Smoke BBQ.  Several other family members are also involved in cooking and serving throughout our busy season.
